Pakar gizi\u00a0IPB University, Prof Ali Khomsan, menyebut kacang\u00a0hijau sebagai salah satu sumber\u00a0protein nabati\u00a0penting yang bisa mencegah\u00a0stunting\u00a0pada anak.<\/p>\n<p>Menurut dia, kandungan protein\u00a0kacang hijau\u00a0relatif tinggi sehingga dapat mendukung pemenuhan gizi khususnya pada anak-anak dan ibu hamil. (foto: Kompas).<\/figcaption><\/figure>\n<p>&#8220;Kalau kita bicara tentang kacang hijau sebagai leguminosa (kacang-kacangan), itu adalah tanaman yang memang kaya protein. Kandungan proteinnya bisa berkisar 20 sampai 35 persen, sehingga relatif tinggi,&#8221; kata Prof Ali Khomsan dalam keterangan tertulis, dikutip Sabtu (7\/2\/2026).<\/p>\n<p>Menurutnya, pemanfaatan kacang hijau sebagai makanan tambahan di\u00a0posyandu\u00a0dapat berkontribusi pada peningkatan asupan protein anak, terutama bagi mereka yang mengalami stunting, gizi kurang, atau gizi buruk. Namun, ia menegaskan bahwa\u00a0pemberian makanan tambahan\u00a0tidak bisa dilakukan secara sporadis.<\/p>\n<p>&#8220;Kalau di posyandu pemberiannya hanya satu bulan sekali, itu pasti tidak cukup. Anak-anak yang mengalami stunting atau masalah gizi harus diutamakan pendekatan pangan, diberikan makanan setiap hari, ada yang selama tiga bulan, ada yang sampai enam bulan,&#8221; kata\u00a0dia.<\/p>\n<p>Prof Ali Khomsan menilai olahan kacang hijau dalam bentuk bubur, camilan, atau produk pangan lainnya relatif mudah diterima oleh anak-anak. Oleh karena itu, kacang hijau tidak dapat berdiri sendiri sebagai solusi tunggal penanggulangan stunting.<\/p>\n<p>&#8220;Protein nabati daya cernanya tidak setinggi pangan hewani, sehingga harus dikombinasikan dengan pangan hewani seperti susu, telur, atau sumber hewani lainnya. Tetapi pangan lokal kacang hijau ini tetap perlu dioptimalkan,&#8221; kata dia.<\/p>\n<p>la merekomendasikan agar pemanfaatan kacang hijau diintegrasikan secara berkelanjutan dalam program pemberian makanan tambahan di posyandu dan\u00a0edukasi gizi\u00a0masyarakat.
