Warna<\/h3>\n<p>Dikutip dari buku Potensi Komoditas Pangan Lokal di Kabupaten Kuningan karya Slamet Hadi Kusumah, dkk, perbedaan warna pada ubi jalar disebabkan karena kandungan pigmen pada masing-masing ubi tersebut.<\/p>\n<p>Ubi ungu punya warna ungu mulai dari kulit sampai bagian dagingnya.Warna ungu tersebut dikarenakan adanya pigmen antosianin yang tinggi pada ubi ini. (Tong et al. 2020).<\/p>\n<p>Sementara, warna ubi yang dominan oranye dan kuning disebabkan karena kandungan pigmen alami yang bernama beta karoten.<\/p>\n<h3>2. Kandungan Antioksidan<\/h3>\n<p>Mengutip laman Livestrong, semua ubi jalar mengandung antioksidan. Namun, sumber dan jumlahnya ditentukan juga dari warna dagingnya.<\/p>\n<p>Ubi jalar warna oranye kekuningan banyak mengandung karotenoid (pigmen kuning dan oranye yang disintesis oleh banyak tanaman). Sementara, ubi jalar dengan daging berwarna ungu kaya akan antosianin.<\/p>\n<p>Karotenoid berfungsi sebagai sumber vitamin A (retinol) dalam tubuh. Karotenoid yang paling umum di antaranya ada beta karoten, lutein, likopen, dan zeaxanthin.<br \/>\nSelain itu, karotenoid juga bermanfaat untuk meningkatkan sistem kekebalan tubuh sekaligus mendukung kesehatan mata.<\/p>\n<p>Sementara kandungan antosianin dalam ubi ungu merupakan flavonoid yang mungkin memiliki efek antiradang dan antimikroba. Ubi ungu bisa dipanggang dengan minyak zaitun, dibuat pai, maupun smoothie.<\/p>\n<p>Sementaa ubi kuning bisa diolah dengan sup atau semur, digoreng, atau ditumbuk dengan dibumbui garam, kayu manis, dan mentega.<\/p>\n<h3>Lebih Bagus Ubi Ungu atau Kuning untuk Diet?<\/h3>\n<p>Dilansir Times of India, mengutip dari para peneliti dalam The American Journal of Clinical, ubi jalar oranye\/kuning adalah salah satu sumber beta karoten yang tinggi.
