Berikut <em>tips<\/em> untuk menghasilkan ikan goreng <em>endeus<\/em>.<\/p>\n<p><strong>1. Pakai minyak baru<\/strong><\/p>\n<p>Guru Besar Ilmu Gizi IPB University Indonesia, Prof Dr Hardinsyah, menyarankan sebaiknya gunakan minyak baru untuk menggoreng ikan. Selain itu, pakai hanya sekali saja untuk menghindari lemak yang berubah menjadi tidak sehat.<\/p>\n<p>Prof Hardin juga mengingatkan untuk menggunakan minyak secukupnya. Jangan terlalu berlimpah.<\/p>\n<p>&#8220;Misalnya permukaan ikan tingginya dua sentimeter, minyaknya jangan sampai seperti penjual di pinggir jalan kuali dan minyaknya,&#8221; ujarnya dalam\u00a0<em>press launch<\/em>\u00a0Sarden ABC Bumbu Serundeng Siap Goreng, Kamis (26\/1\/2023).<\/p>\n<p>Chef Jojor Panggabean, R&amp;D Innovation Chef ABC, juga menyarankan untuk memakai minyak baru saat mengoreng ikan. Suhu minyak tidak terlalu panas<\/strong><\/p>\n<p>Prof Hardin menyarankan agar tidak terlalu lama ketika menggoreng ikan. Waktu yang dibutuhkan untuk menggoreng tergantung jenis ikannya.<\/p>\n<p>&#8220;Kalau ikan dari basah, pasti lebih lama. Namun, kalau ikan yang sudah diolah, dua dan tiga menit sudah selesai,&#8221; ujarnya.<\/p>\n<p>Prof Hardin mengingatkan saat menggoreng ikan jangan sampai keluar asap. Jika hal itu terjadi, maka suhu minyak goreng sudah terlalu tinggi, suhunya mencapai 180 derajat Celsius.<\/p>\n<p>&#8220;Untuk menggoreng ikan sebaiknya suhunya di bawah 140 derajat Celsius,&#8221; ujar Prof Hardin.<\/p>\n<p>Senada,\u00a0<em>chef<\/em>\u00a0Jojor mengatakan suhu menggoreng ikan, jangan sampai 180 derajat Celsius. Jangan seperti menggoreng kentang.<\/p>\n<p><strong>3. Jangan berulang-ulang<\/strong><\/p>\n<p>Prof Hardin juga mengingatkan untuk tidak menggoreng ikan berulang. Ketika hendak\u00a0makan ikan\u00a0goreng, sesuaikan dengan kebutuhan saja.<\/p>\n<p>&#8220;Misalnya untuk konsumsi tiga orang, butuh satu ekor atau tiga ekor, ya sudah masak tiga ekor saja, karena satu orang satu ekor. Tiriskan<\/strong><\/p>\n<p><em>Chef<\/em>\u00a0Jojor menyarankan agar ikan yang sudah dicuci dan dibumbui ditiriskan terlebih dahulu sebelum dimasak. Tiriskan sekitar dua sampai lima menit sebelum digoreng.<\/p>\n<p>Sejam juga masih aman. Ketika sudah tidak terlalu berair, ikan tidak akan menimbulkan percikan minyak saat digoreng.<\/p>\n<p><strong>5. Pakai penutup<\/strong><\/p>\n<p>Menurut\u00a0<em>chef<\/em>\u00a0Jojor, makanan protein hewani apapun bila habis diungkep langsung digoreng pasti akan memunculkan percikan minyak. Tutup ikan saat digoreng. Penutup wajan dapat mencegah percikan minyak mengotori dapur atau mengenai tangan.<\/p>\n<p><strong>6. Dibalik<\/strong><\/p>\n<p>Untuk ikan yang sudah diolah, goreng selama dua menit untuk satu sisi. Setelah itu, ikan bisa di balik. Goreng sisi lainnya selama dua menit berikutnya.
