Pati dari tumbuhan\u00a0talas\u00a0rupanya bisa dimanfaatkan untuk membuat berbagai hidangan, seperti\u00a0bakso\u00a0dan tahu bakso. Inovasi itu telah dilakukan oleh Siti Sholikhah dan sang suami, Budiansyah, yang menjual berbagai varian produk berbahan\u00a0pati talas\u00a0sejak 2015.<\/p>\n<p>Bermula dari produksi rumahan yang dipasarkan dari mulut ke mulut, berbagai produk tahu\u00a0bakso talas\u00a0dan bakso talas itu pun berlanjut dengan penjualan secara daring. Sejak 8 Desember 2022, pasangan Sholikhah dan Budiansyah membuka rumah makan yang diberi nama Resto Mama Shakila (MS) di bilangan Cibuluh, Kota Bogor.<\/p>\n<div class=\"picked-article\">\n<p>Sholikhah bercerita, resep awal bakso dia dapat dari almarhum ayah mertuanya yang merupakan pengusaha kuliner di Blora, Jawa Tengah. (ilustrasi)<\/figcaption><\/figure>\n<p>&#8220;Lebih dari tiga bulan coba-coba, sampai komposisi gramasinya pas. Hampir setiap hari\u00a0<em>trial and error<\/em>. Sekarang, untuk skala yang pas, skalanya kira-kira dengan dua kilogram daging sapi menggunakan 500 gram pati talas,&#8221; kata Sholikhah, Selasa (3\/1\/2023).<\/p>\n<p>Dengan komposisi tersebut, dari tangan Sholikhah lahir racikan lezat berbagai menu bakso talas serta\u00a0tahu bakso\u00a0talas. Ada menu tahu bakso talas orisinal, pedas, keju, dan\u00a0<em>mix<\/em>. Menu bakso antara lain bakso tulang sumsum rawit keju, bakso selimut kabut, bakso iga, bakso beranak mercon, bakso isi daging, bakso urat, dan masih banyak lagi.<\/p>\n<p>Soal rasa, bakso talas tidak berbeda dengan bakso daging sapi pada umumnya. Pembeli mungkin mengira\u00a0akan ada rasa talas, tetapi ternyata sama sekali tidak ada, sebab yang dominan adalah rasa daging yang gurih.<\/p>\n<p>Aroma khas daging pada baksonya tetap terasa, namun tidak berlebihan. Sebab, menu-menu di\u00a0Resto MS\u00a0disuguhkan dalam mangkuk gerabah. Pertimbangannya bukan sekadar estetika, tapi juga keamanan, kelestarian lingkungan, serta menjaga kualitas makanan.<\/p>\n<p>Dijelaskan Sholikhah, mangkuk gerabah berfungsi sebagai penangkap panas, sehingga makanan yang disajikan menggunakan peralatan itu akan bertahan hangat lebih lama. Gerabah berwarna kecokelatan yang digunakan dipesan khusus dari Blora, Jawa Tengah.<\/p>\n<p>Untuk membuat\u00a0bakso olahan\u00a0dari pati talas, Sholikhah mengakui memang susah-susah gampang.
