Hal ini juga sesuai dengan anjuran Kemenkes dalam pembatasan gula, garam, dan lemak.<\/p>\n<p>Menurut Dr dr Inge Permadhi MS SpGK (K), anjuran Kemenkes ini sebenarnya relevan untuk menghemat pemakaian minyak goreng. Ia menjelaskan, minyak yang dipergunakan untuk menggoreng bisa meningkatkan\u00a0kolesterol\u00a0total LDL dan menyebabkan HDL (kolesterol baik) menjadi rendah.<\/p>\n<p>&#8220;Kalau yang disebut menghemat sebenarnya jangan menggoreng pakai minyak atau menggoreng sangat sedikit, misalnya bumbunya dimasak dulu dengan minyak, nanti minyak sisa mungkin dipakai lagi menggoreng bumbu, jadi saat bahan makanannya masuk tidak ada minyak lagi,&#8221; kata dr Inge, Sabtu (19\/3\/2022).<\/p>\n<p>Menggoreng dengan lebih banyak minyak (<em>deep fries<\/em>, bisanya dilakukan untuk daging ayam, bakwan, kerupuk, dan lainnya. Namun, yang perlu diingat, pemakaian minyak ini juga hanya boleh sekali pakai jika digunakan menggoreng, bukan hanya memanaskan. Jangan sampai, misalnya menggoreng berulang, bahkan sampai minyak menghitam.<\/p>\n<p>\u201cKita tahu minyak untuk makanan yang digoreng sudah menyebabkan bahan makanan kemasukan minyak. Misalnya bakwan punya kalori X, tapi ketika digoreng, di dalam bakwan itu sudah ada minyak masuk, jadi tinggi kalori,&#8221; jelas Inge.<\/p>\n<p>&#8220;Kalau sudah kolesterol berarti ada obat lagi yang dibeli,\u201d katanya.<\/p>\n<p>Ada alternatif lemak yang sehat, semisal omega 3, 6 dan 9, sehat tetapi juga sebenarnya tidak untuk menggoreng. Jenis minyak ini dapat digunakan sebagai dressing salad, misalnya, atau menumis sesuatu.
